An organically cultivated farm in Tuscany

With a ‘farm to plate’ philosophy at the 300-acre organically cultivated estate in Tuscany, the farmers, culinary gardeners and chefs produce biodynamic gastronomy that nourishes the body and soul. Each day the estate’s farmer collects milk from Borgo’s sheep that is then transformed into artisan cheese and yogurt at the on-site dairy. The farm includes free-range chickens, honeybees, alpacas and extensive vineyards. The farm supplies both the inspiration and ingredients for its restaurants, Saporium and Trattoria sul’Albero.

Our Gardens

Stepping into Borgo Santo Pietro’s exquisitely groomed gardens is a surrender of the senses. Thirteen acres of uplifting aromas and blissful vistas is a potent tonic for wellbeing. The gardens and relax areas at Borgo Santo Pietro are a myriad of hidden gems, each with their splendid display of blooms which capture the senses, both with their exquisite scents and their unbounded beauty. These magical gardens are a wonder to visit and once you set off you cannot but continue in your journey until each has been revealed! Lavender buzzing with busy bees, sweet scented jasmine, hydrangeas and roses are just a sample of the flowers to be found flourishing amongst the aged olive trees, tall cypresses and scented lemons.

Our Farm

The Borgo Santo Pietro 270-acre, organically cultivated estate comprises a working farm, artisan cheesemaking dairy, two vineyards, 13 acres of gardens with expanding culinary gardens, and 100 acres of rolling green pasture land. Our philosophy of nurture via nature and a spirit of collaboration are tangibly felt through the teamwork of our farmers, culinary gardeners and chefs coming together to bring the fruits of organic cultivation to the table.

Herb Farming

Set within our 270-acre organically cultivated estate, the 6-acre herb farm grows a wide assortment of plants which include rosehip, rosemary, lavender, calendula, juniper, peppermint, melissa and hypericum. These herbs are specifically grown for use in our on-site laboratory, where our expert alchemist blends the potency of the plants with science in order to extract the active ingredients for creating the regenerative skincare collection – Seed to Skin. Guests can learn about herb farming from our master gardeners while taking a guided tour of the property.

Vineyards

We cultivate 25 acres of vineyards on our estate, situated on the slopes of the Valle Serena and on the hills nearby. First established in 2014, our vineyards are part of our long-term vision at Borgo Santo Pietro to create a flourishing self-sustainable estate. Planted with a density of 6250 plants per hectare to ensure high-quality wine, our red and rosè wine crop consists largely of Sangiovese, with the addition of Cabernet Sauvignon, Merlot, Petit Verdot and Pinot Noir. White wine grapes under cultivation include Trebbiano Toscano, Chardonnay and Viognier. In 2018, our vineyards will be ready for their first harvest.
